A profiterole is a classic French pastry made from light, airy choux dough that bakes into a crisp, hollow shell. These bite-sized rounds are filled with Mascarpone whipped cream. The dish is celebrated for its contrast of textures and temperatures, balancing a crisp exterior with a cold, creamy center. When profiteroles are stacked into a cone wrapped in spun sugar, it is called a Croquembouche (literally “crunches in the mouth”). This is the traditional, spectacular wedding and celebration cake of France.
